Tamarind Balls

One of the greatest snacks of all time, especially for those who have a tamarind tree in their yard, and one can just pick a tamarind from the tree when it is in season, shell it and eat.

TAMARIND BALLS

4 cups shelled tamarind

1 tbsp baking soda

1 tbsp salt

4 cups granulated sugar

Chopped hot peppers (optional)

 

Break into the tamarind segments. Sprinkle with soda and salt and pour about 1/2 cup boiling water on tamarind. Stir until water is absorbed and seeds leave pulp; remove seeds.  Stir in 2 cups sugar and blend well. Cover and set aside overnight.

Stir in remaining sugar, adding more if necessary to make the mixture firm enough to handle. Shape into balls and allow to dry. Roll balls in sugar. Wrap in paper squares, if preferred.
