Cocoa Tea Muffins

Trinidad and Tobago’s one of many great chef Wendy Rahamut is an inspirational and well-established chef and her recipes are divine, that I often am amazed that many of our own people, who have purchased her cookbooks and even tried their hands at creating her recipes with their own style and taste.

One of her great recipe, which I love is her cocoa tea muffins.


2 cups flour
3/4 cup brown sugar
1 tbsp baking powder
2 tsps grated nutmeg
1/2 tsp cinnamon
Pinch of salt
1 egg
3/4 cup milk
1/3 cup butter, melted
1 tsp vanilla
1/2 cup dark chocolate chips

Preheat oven to 350 degree F.  Combine all dry ingredients in a mixing bowl. Beat egg with milk mixed with one tablespoon of vinegar, add butter and vanilla. Add to dry ingredients and stir only to combine, spoon into greased muffin tins and bake for twenty-five (25) minutes until risen and golden.
