Cassava Fritters

It is becoming more and more optional that people should start to eat much more healthy foods and the Caribbean have been known to be one who loves ground provision and eating from their own garden, adding with a little of that fast food and foreign imports and snacks.



1 lb uncooked cassava, peeled and cut into small pieces
3 cloves garlic
3 tbsp chopped onion
1/4 cup chopped chives
1/2 hot pepper
1 tbsp cornstarch
1/2 tsp baking powder
1 egg
Salt and black pepper to taste

Combine all ingredients in a food processor and process to a fine paste. Season with salt and black pepper to taste. Drop by teaspoonful into hot oil and fry until puffed and golden.
