I know that a lot of you was asking, what can I make with guava and I have to say a lot of things, but one that hooked me was guava wine. No, I did not make it, I borrowed the recipe from a friend, who got it from her friend, who got it from somewhere, I cannot recall, so I am not taking any credit for this recipe.
6 1/2 dozen med Ripe Guavas, burst in half with hands
4 cups sugar
2 tbsp instant yeast
5 cups sugar
1 cup raisins
Sterilize all utensils using hot water, which is a most. Wash the guava, burst with your hands and place in a sterilized bucket. Boil the 5L of water and set aside to cool.
Add the 4cups sugar and water. Stir. Add the yeast then stir. Cover lightly and leave to set for twenty-two (22) days. When the 22 days has passed and the whole room is smelling of guava when we opened the bucket.
Wait, we are not finished yet, as you have to pour out the “wine” and discard the fruits.
Strain through a fine sieve or cloth and sweeten with the 5 cups of sugar. Pour in a sterilized container and add the raisins. Leave for twelve (12) days. After the 12 days strain again and pour into sterilized “bottles” and store in a cool dry place.
Dually noted is that the wine will still need to strain as the residue settles while the wine cures overtime.
