Breadfruit Cake

There is breadfruit fish cake and then there is breadfruit cake, both are great tasting and easy to make, for all those who love breadfruit.

I had to cut the breadfruit in half and used one half to make this dish, which I tried to follow the recipe, but had to add my own style to the dish, which came out okay. The rest of the ingredients are as follows:

½ lb margarine

½ lb sugar

4 eggs

1 tsp essence

3 cups flour

3 tsp baking powder

1 tsp spice

¼ cup milk

Preheat oven to 350 degrees. ƒ Grease cake pan and set aside.  Cut and peel breadfruit ƒ Boil until tender, crush and set aside ƒ Cream margarine and sugar until light and fluffy ƒ Add eggs one at a time, beating well after each addition. ƒ Stir in essence. ƒ Combine flour, baking powder and spice – add to butter mixture alternating with milk. ƒ Fold in crushed breadfruit. ƒ Pour mixture into greased pan ƒ Bake for 30 to 35 minutes or until wooden pick inserted comes out clean.

I love coconut ice cream, or custard cream, and you can add anything to it, as you desire.
