There is breadfruit fish cake and then there is breadfruit cake, both are great tasting and easy to make, for all those who love breadfruit.
I had to cut the breadfruit in half and used one half to make this dish, which I tried to follow the recipe, but had to add my own style to the dish, which came out okay. The rest of the ingredients are as follows:
½ lb margarine
½ lb sugar
1 tsp essence
3 cups flour
3 tsp baking powder
1 tsp spice
¼ cup milk
Preheat oven to 350 degrees. Grease cake pan and set aside. Cut and peel breadfruit Boil until tender, crush and set aside Cream margarine and sugar until light and fluffy Add eggs one at a time, beating well after each addition. Stir in essence. Combine flour, baking powder and spice – add to butter mixture alternating with milk. Fold in crushed breadfruit. Pour mixture into greased pan Bake for 30 to 35 minutes or until wooden pick inserted comes out clean.
I love coconut ice cream, or custard cream, and you can add anything to it, as you desire.
