I know that Christmas is over, but I think that we should have Christmas 365 days of the year. We all should be warm and welcoming and caring towards one another and no just during the Christmas season. I enjoyed sorrel shandy carib and sorrel drink, that I thought, why not sorrel jelly, sorrel frizz and sorrel jam to name a few.
2 pounds sorrel
3 cups granulated sugar
Remove sorrel petals and rinse. Place sorrel in a deep pot and cover with water. Bring to the boil and simmer until tender (about 10-15 minutes). Pour in a strong fine cloth (muslin) and allow draining. Do not squeeze. Pour liquid in a heavy pot; add sugar and cook until jelly spins a thread. Pour in hot sterilized jars and seal immediately.
