Cocoa Spiced Rub 

I love the great taste of cocoa and chocolate and this is a great time for chocolate and not only at Valentines Day.

1/3 cup unsweetened local cocoa powder 

1/2 cup brown sugar 

3 tbsp chilli powder 

2 tbsp salt 

2 tbsp onion flakes 

1 tbsp minced garlic 

1 tbsp oregano 

1 tbsp dried mustard 

2 tsp powdered ginger

2 tsp cinnamon 

1 tsp ground allspice 

4 lbs chicken pieces or ribs

Mix cocoa powder, sugar and spices together in a bowl. Rub meat generously with spice mixture, and wrap in plastic wrap; refrigerate overnight.

Remove from refrigerator and bring to room temperature. Heat oven to 375°F. Place in shallow roasting pan; bake until tender, about 40 minutes.
