Tannia Cakes

To my vegetarian friends, I hope that you enjoy this great recipe.

1 lb Tannia

1 tbsp. flour

1/2 tsp. baking powder

a tbsp. finely chopped chive

1 tsp. chopped parsley

1 egg, beaten

1/2 tsp. salt

1/2 cup oil for frying

Pinch for black pepper

 

Boil tannia for 10-15 minutes; cool slightly, peel and grate.  Add flour, baking powder, chive, parsley, egg, salt and pepper to grated tannia; combine well. Drop by tablespoon in hot oil or form into cakes and fry until golden brown.  Drain on paper towel.

Serve with a dip.
