This is the season to be merry and what can make one more merrier, than sweet smell and taste of chocolate. What’s better than Chocolate Rum Pots….
8 oz semisweet chocolate/cocoa powder
4 eggs, separated
6 tbsp. sugar
4 tbsp. dark rum (whatever rum that you have, as longs as it is dark)
4 tbsp. heavy cream
a little whipped cream (optional)
marbled chocolate shapes
Melt the semisweet chocolate and let cool slightly. Whisk the egg yolks with the sugar in a bowl until very pale and fluffy. Drizzle the chocolate into the egg yolk and sugar mixture and fold in together with the dark rum and the heavy cream. Whisk the egg whites in a clean bowl until standing in soft peaks. Fold the egg whites into the chocolate mixture in 2 batches. Divide the mixture among 6 individual dishes, and let chill for at least 2 hours before serving. To serve, decorate with a little whipped cream if liked and a marbled chocolate shape.
