I went to a young fisherman’s 40th birthday bash yesterday, and it was like a seafood galore and fiesta. One of the seafood dishes which got my attention was the dasheen crusted fish fillet; that I had to ask for the recipe.
6 Red fish fillets, ( but if you have salmon or other types of fish fillets would do).
1 cup dasheen flour
1/2 cup cornmeal
1/8 tsp black pepper
1 egg for egg wash
1 cup plain flour for coating
oil for frying
Season fish and set aside. Mix dasheen flour, cornmeal, salt and pepper in a bowl. In another bowl place plain flour for coating and in another bowl, beat egg with water for egg wash. Coat fish in plain flour, then egg wash and then flour and cornmeal mixture. Shake out all excess flour. Heat oil in nonstick frying pan. Fry until golden brown on both sides.
