Dasheen Stuffed Fish

I am going to just say that I really enjoyed eating this and I truly love it. Here it is Dasheen Stuffed Fish.

12 Deboned flying fish or red snapper, seasoned

2 cups peeled, cooked and crushed dasheen

2 flavoured pepper, chopped

2 cloves garlic, chopped

1 tsp finely diced onion

1 tsp finely chopped celery

2 tbsp. butter

2 tbsp. olive oil

pinch of salt and pepper

In a bowl, add dasheen, seasoning, butter, salt and pepper, combine well. Place fish flesh up. Add 1 teaspoon of mixture at the smallest end of the fish.  Roll the fish until you reach the end, secure with plain toothpicks. Place on a greased baking dish, drizzle with oil and bake for 5-8 minutes until cooked.  Serve in tomato sauce or marinara sauce.
