With the upcoming Tobago Blue Food Festival taking place in October 2016. I will be posting a lot of recipes taken from Taste of Tobago Blue Food Recipe Book by Yzanne Williams-Chance and other cookbooks on Blue Food Recipes, using dasheen as the main ingredient, each week until the day of the event.
2 lbs flour
1 1/2 tbsp sugar
1 oz margarine
1 oz shortening
1 tsp salt
2 tbsp. dry yeast
1 lb dasheen peeled, cubed and cooked, reserve liquid
Combine all dry ingredients together in bowl. Blend dasheen in liquid, not too smooth. Make a well in the flour mixture. Pour the dasheen in the center mixing together with flour to form a soft, smooth dough, adding water if necessary. Place in an oil greased bowl and let rise, double in size. Punch down dough and divide into three. Form three loaves, place in 3 greased 9 inch loaf pans. Let rise until doubled. Bake at 375 o/f., let cool. Butter top if liked.
