The name alone says it all. Trinbago Oildown.
1 can coconut milk
1 sliced onion
2 garlic cloves grated
1 hot pepper
Whenever my mom purchased pigtail, she would cut it up into small pieces and placed it into a pressure pot with about five (5) cups of water, just like her mother taught her, and also the meat to become tenderize, after about 25 minutes, it should be good by that time. Throw out the water and put the pigtail aside.
Cut the breadfruit in half and then cut both half into halves. Now peel off the skin. In a deep pot pour in the coconut milk about 4 cups of water, pepper sauce, grated garlic, sliced onions and some blended herbs. Add the tenderize pigtail.
Place the pot with the pigtail and other ingredients on the stove and allow them to simmer for a few minutes. Add the sliced breadfruit, after about 20 minutes it should be cooked. Taste and add a tip of salt if required.
