How, I missed my uncle favorite pommerac pie.
1 cup sweet biscuits crumbs or cracker
3 tbsp pommerac juice
12 pommerac, cored and thinly sliced
2 tsp lemon/lime juice
I tsp ground cinnamon
1 tbsp cornflour
1 cup pureed pommerac
1 cup granulated sugar
Moisten crumbs with pommerac juice and press onto a greased 8″ pie dish. Arrange pommerac slices in circles; sprinkle with lime juice and cinnamon. Cover with foil and bake for 45 minutes at 350°F or until fruit is tender. Remove from oven and cool to room temperature. Combine cornflour, water, pureed pommerac and sugar; cook until mixture thickens and coats spoon. Cool mixture and pour over pie. Chill and serve.
