Gingerbread Cookies

I love gingerbread cookies, especially cocoa gingerbread cookies, that my dear friend Arianna, mom use to make, but she refused to share the recipe, as it was her mom’s recipe and I never asked my friend Arianna for it out of respect, but it is one snack, I will always love and the memories of biting into it will last forever.

There is always the original gingerbread cookie recipe, that one can develop and add their own uniqueness too.

Gingerbread Cookies
1 cup white sugar
1/2 cup butter
1 egg
1 cup molasses
3 cups all purpose flour
1 1/2 tsp baking soda
1 teaspoon ground cinnamon
1 tsp ground ginger
1/2 cup ground cloves
1/2 tsp salt

Preheat oven to 350°F.  Grease and flour a 9-inch square pan. In a large bowl, cream together the sugar and butter. Beat in the egg, and mix in the molasses. In another large bowl, sift together the flour, baking soda, salt, cinnamon, ginger, and cloves. Blend into creamed mixture. Stir in the hot water. Pour into the prepared pan. Bake for 1 hour in the preheated oven, until a knife inserted in the center comes out clean.

Allow to cool in pan before serving. You can make designs on the cookies or add sprinkles and serve.
