Chicken Puffs (Choux Pastry)

I always enjoy making these and sinking my teeth into it, is a glorious feeling.

4 oz butter
2 cups flour
3 large eggs
12 oz chicken breast
2 tbsp mayonnaise
1 tbsp chopped chive
1 tbsp finely chopped parsley
1 tbsp finely chopped pimento peppers
2 tbsp finely chopped stuffed olives 2 tbsp finely chopped pickles
Pinch of salt

Bring water and butter to the boil until the butter is melted. Remove from heat and add flour and salt;  return to low heat and stir for approximately 3 minutes until mixture leaves the pan and forms a ball. Remove from heat and allow to cool. Beat in eggs one at a time until mixture is smooth and of a dropping consistency. Drop mixture by teaspoon or pipe on a lightly greased baking sheet. Bake in a preheated oven 350°F for approximately 30 minutes. Remove from oven and cool completely. Steam chicken, mayonnaise, chive, parsley, pimento peppers, olives and pickles. If mixture needs more liquid use some of the stock from chicken. Cut and fill puffs with chicken mixture.
