Yam nut balls

Please do not take this personal, but the first time I heard my neighbor say that she was going to make some yam nut balls, after we came home from the farmers market, I thought she was joking, because in all my years I have never heard anyone making those yam nut balls, that I had to ask her if I can help her, for I had to see for myself.

Luckily enough, I enjoyed cooking them, than eating them, so do enjoy some yam nut balls.

2 cups crushed cooked yam
1 egg, slightly beaten
1/2 cup grated cheese
1/2 cup dry breadcrumbs
1 tsp salt
1/4 tsp pepper sauce
1 tbsp finely chopped chive
2 tbsp melted margarine
1/2 cup crushed cashew or peanuts
Combine yam with egg, cheese, breadcrumbs, salt, pepper and chive. Shape a heaped tablespoon of mixture into balls. Dip each ball into melted margarine and then in crushed nuts. Put on a greased tray and grill until lightly brown.
