Meat Loaf with vegetables

Today’s menu is somewhat of a take me back to those old childhood days of what grandma made. One special dish was meat loaf, now today we add just about everything else to the dish.

Here is grandma’s recipe with a little modern – Meat Loaf with vegetables.

1 lb minced beef, seasoned
1 lb carrots, coarsely grated
1 lb potato, coarsely grated
1/2 lb cabbage, finely shredded
1/2 cup onion, finely chopped
1/2 cup sweet peppers, finely chopped
1 egg, beaten
1 tbsp soy sauce
1/2 tsp salt
1/2 tsp black pepper
3/4 cup fine, dry breadcrumbs

In a large bowl combine beef, carrots, potato, cabbage, onion, sweet pepper, egg, soy sauce, salt, black pepper and 1/2 cup breadcrumbs. Pack in greased loaf tin and sprinkle with remaining breadcrumbs. Bake at 325°F for about 50 minutes. Serve with bread rolls.
