Longing for that nutty pasta (vegetarian)

Today, instead of the weekly all times Friday signature dish Pelau, we are having the nutty pasta.

Nutty Pasta (Vegetarian)
8 oz noodles or spaghetti
1/2 cup finely chopped onion
1 tbsp vegetable oil
2/3 cup tomato juice
3 tbsp crunchy peanut butter
1 tsp yeast extract or soy sauce
Sliced red and green sweet peppers
Salted peanuts and lemon twists for garnish

Boil noodles in salted water until tender. Drain and set aside. Fry onion in oil until golden brown. Stir in tomato juice, peanut butter, yeast extract or soy sauce; add more tomato juice if needed to make a smooth sauce. Add noodles to tomato sauce and heat thoroughly. Garnish with sweet peppers, peanuts and lemon twists.
