Green Fig Souse

The name alone may turn some of you off, truth be told it had at one point turned me off, by the mere mention of its name. Who eating green fig souse, I rather eat ripe fig raw from the tree. After much persuasion from my mom, I tasted it. Mother’s always knows best.

Green Fig Souse
2 lbs green figs (bananas)
2-3 tbsp. lime juice
2 cloves garlic, crushed
1/2 cup thinly sliced onion
1 tsp salt
1 tsp chopped hot pepper
1/4 tsp ground white pepper
1 cup sliced cucumbers
1/2 cup chopped watercress

Boil figs, drain, peel and slice crosswise in 1/2 pieces. Add enough water to just cover the figs. Add lime juice, garlic and onions. Season with salt, hot pepper and white pepper. Add cucumbers and watercress; combine well.
