Tropical Crab with Avocado and Avocado Crab Soup

Being an island girl from the tropics, and a lover of crab and dumpling, Tobago signature dish, why not make a crab with avocado recipe. Here is two, hope that you enjoy them both.

Crab with Avocado

6 ounces cooked crabmeat
1 medium avocado, peeled, pitted, chopped
1 clove garlic, crushed
1 tablespoon fresh lemon juice
¼ teaspoon paprika
Salt and black pepper, to taste
Large butter lettuce leaves, for serving
Sliced green onion, for garnish

Combine all ingredients, except lettuce and green onion, in a medium bowl; mash to desired consistency. Arrange lettuce leaves on 4 serving plates; top with prepared avocado mixture. Garnish with green onion and serve.

Avocado Crab Soup

½ pound cooked crabmeat
4 ripe avocados, peeled, pitted, chopped
4 tablespoons butter
1 medium onion, finely chopped
1 tablespoon all-purpose flour
2 cups heavy cream
4 cups chicken stock
Salt and black pepper, to taste

Mash crabmeat and avocados together in a medium bowl; set aside. Melt butter over medium heat in a medium saucepan; add onion and cook until softened, stirring occasionally, about 4 minutes. Add flour to saucepan; cook until color turns golden, about 2 minutes, stirring constantly. Add cream and bring to a boil, stirring, about 3 minutes. Simmer until mixture thickens, stirring occasionally, about 3 minutes. Whisk in stock; simmer until thickened, stirring.  Add reserved crabmeat mixture to saucepan; whisk well to combine. Simmer until mixture is smooth and thick, about 5 minutes, stirring occasionally. Season to taste and serve warm.

  1. That sounds fabulous! I’ve had Mexican shrimp soup with avocado in a chicken broth, and Maryland crab soup with potatoes in a tomato broth, but never a soup combining avocado and crab. I’ll try it this weekend! 🙂
