Apart from Dark Chocolate Ice Cream is my chocolate mousse.
2 cups evaporated milk
1/4 cup cocoa powder
3/4 cup granulated sugar
1 egg, separated
1 tsp. vanilla essence
1 heaped tbsp. gelatin, soaked in 1/4 cup water
2 tbsp. icing sugar or less
1/2 cup evaporated milk, frozen toasted coconut or chopped nuts
Combine milk, cocoa powder and sugar, bring to the boil and remove from heat. Stir in egg yolk, vanilla and gelatin, stir until gelatin dissolves. Chill mixture until thickened. Whip egg white stiff and then gradually beat in icing sugar. Whip frozen evaporated milk until fluffy. Beat cocoa mixture for a few seconds then fold in whipped evaporated milk and stiffly beaten egg white. Pour in a dish and chill.
