How I wish my friend Nicole was still living here in Tobago and not halfway across the world. She relocated to Canada one year ago to further her studies and make a better life for herself and her son DeAndre. She used to make the best chocolate fudge, since she too is a chocolate lover.

2 lbs granulated sugar.
2 cans condensed milk (14 oz. each)
2 heaped tbsp.  cocoa powder
1 tsp. vanilla
1/4 cup water
2 tbsp.  or 1 oz. margarine
1/2 cup chopped nuts (optional)

Combine sugar, milk, cocoa, vanilla, salt and water. Cook over low heat stirring continuously until soft ball stage. Add margarine and cool. Beat until fudge loses its gloss. Stir in nuts and pour in greased dish. Cool and cut in squares.

Makes about 36 squares
