Now, the world is waking up to the knowledge and acceptance of the super food – breadfruit; but I have always loved breadfruit, not as much as chocolate, but I love it none the less.
Today’s menu Breadfruit and Corn Pie.
1 breadfruit, peeled and sliced (2 1/2 lbs)
2 tbsp or 1 oz margarine
1 cup cream style corn
2 eggs, beaten
1-2 tsp mustard
1 tsp salt
1/2 cup grated cheese
1 tsp paprika
Hot pepper to taste
Boil breadfruit, drain and crush in large bowl. Add margarine, corn, eggs, mustard, salt, pepper and 1/4 cup cheese. Combine well, beating by hand or with electric beater until light and fluffy. Pour in a greased dish and sprinkle with the remaining cheese and paprika. Bake at 350°F for 15-20 minutes; cut in squares.
