Eggless Chocolate Cake

I was persuaded into making this for a friend’s birthday party and it was well received.  Eggless Chocolate Cake with Chocolate Glaze.

Eggless Chocolate Cake
1 1/2 cup flour
1/4 cup cocoa powder
1 cup brown sugar
1/2 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1 cup water
6 tbsp salad oil
1 tsp vinegar
1 tsp vanilla

Sift flour and cocoa powder. Add sugar, salt, baking soda, baking powder and ground cinnamon. Make a well in the center of the dry ingredients and add water, oil, vinegar and vanilla. Stir until mixture is smooth. Pour into greased, floured 8″ inch square tin. Bake in a preheated oven at 350°F for 30-35 minutes or until tester comes out clean.

Chocolate Glaze
5 tbsp butter
1/3 cup cocoa
1 1/2 icing sugar
2 tbsp evaporated milk
2 tbsp white corn syrup
1 tsp vanilla essence

Melt butter over low heat. Remove and blend in cocoa. Place in bowl, and add rest of ingredients and beat well until smooth and icing sugar is dissolved.

Spread it on top of Eggless Chocolate Cake, add color sprinkles or cheers to give it a colorful look.
